Cheesy Twice Baked Potatoes

Ingredients

  • 4 potatoes
  • 1/2 stick butter
  • 1/2 cup sour cream
  • 1 cup cheddar cheese
  • 1/4 cup milk
  • 4 slices bacon cooked and crumbled

Instructions

  1. Wash and dry potatoes, poke a few holes in them and lay on a foil lined baking sheet

  2. Bake potatoes at 425 for 60 minutes or until softened

  3. Remove from oven and allow potatoes to cool until you're able to handle them, cut open if desired to speed the cooling process.

  4. Cut open the potatoes carefully so as to not damage the skin. Scoop out the insides into a medium size bowl

  5. Mash up the potatoes

  6. Mix in milk, sour cream, butter and 3/4 cup cheese and mix until smooth

  7. Spoon potato mixture back into the potato skins

  8. Top with remaining 1/4 cup cheese and crumbled bacon

  9. Return to the oven for about 10 minutes or until cheese is melted
