Jam Filled Muffins

Serves: 6
  • ½ cup butter or margarine, melted
  • ½ cup of sugar
  • 2 eggs
  • ¼ to ½ cup of vegetable oil
  • 1¾ cup flour
  • 1 T. baking powder
  • ½ tsp salt
  • Smucker's Fruit and Honey Fruit Spread (in your choice of variety)
  1. Pre-heat your oven to 425
  2. Combine your flour, sugar, baking powder and salt
  3. Add in your melted butter, 2 eggs and vegetable oil. Start with ¼ cup but if the mixture seems too dry then add another ¼ a cup of vegetable oil.
  4. Grease your muffin tin or put liners in and then fill about ½ full with muffin mixture
  5. Take around 1 Tablespoon of the Smucker's Fruit and Honey Fruit Spread and put it on top of each muffin mixture
  6. Top with remaining muffin mixture
  7. Bake at 425 for 15-20 minutes, until muffins are a golden brown on top and cooked thru.
  8. Remove from muffin tin and cool on a wire rack
