Funfetti Cookie Sandwiches

  • 1 box Funfetti Cake Mix
  • 1 box vanilla pudding mix
  • ½ cup oil
  • 3 eggs
  • ¼ cup green and red sprinkles
  • Icing Ingredients:
  • 3¾ cup Confectioners Sugar
  • ½ cup butter, softened
  • 4 Tablespoons milk
  • 1 teaspoon vanilla extract
  • 3-5 drops of food coloring
  1. Preheat your oven to 350
  2. The first thing you want to do is make your Christmas Funfetti Cookies You'll mix together the cake mix, pudding mix, eggs and oil in a large bowl. Fold in extra sprinkles if desired
  3. Take your cookie dough and chill it in the refrigerator for about 20-30 minutes. This made it a bit easier for rolling the cookie dough into balls.
  4. Place your cookie dough balls on the baking sheet.
  5. Bake at 350 for 8-10 minutes or until golden brown
  6. Cool for 2 minutes on pan then allow to finish cooling completely on the rack.
  7. Mix up your ingredients for the icing using your mixer, I love using my KitchenAid Mixer for these types of things because I can set it to mix and step away to work on other steps.
  8. Once the icing was completely mixed I divided it into two separate bowls and added food coloring. I did green and red for Christmas. I added a few drops, stirred and then added more as needed.
  9. Next I took my icing bags and tips and put them together and filled them up with the icing.
  10. I used a pretty tip and started from the middle working my way out on the bottom of one cookie. Once the entire bottom of the cookie was iced I placed another cookie on top of the icing, bottom side down.
  11. Unless you're eating the cookies right away place them in the refrigerator to chill and allow the icing to set.
