Black Bean and Corn Salsa

Ingredients
  • 1 Red Bell Pepper, chopped
  • 1 Green Bell Pepper, chopped
  • ½ cup red onion, finely chopped
  • 1 can black beans, drained and rinsed
  • 2 cups frozen corn, thawed
  • 1-2 cloves of garlic, minced
  • Sauce
  • 2 TBSP parsley
  • 2 tsp cumin
  • 2 tsp. chili powder
  • ½ tsp. salt
  • pinch of black pepper
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 2 TBSP red wine vinegar
Instructions
  1. Chop up all of your vegetables and put in a bowl
  2. Add in drained and rinsed black beans and thawed corn and garlic
  3. Mix together ingredients for the sauce in a separate bowl and then add into the bowl of vegetables
  4. Mix everything well and serve with tortilla chips
