Zucchini Pie is a dinner recipe the whole family will love. With a flaky crust and a pie filled with meat, cheese and zucchini, what’s not to love?

Zucchini Pie is one of our favorite recipes. Growing up my mom made this recipe and our family loved it. When Tyler and I got married I made this recipe for him and he fell in love with it too. It’s probably his favorite of all the recipes I’ve made for him. It’s also a favorite of my brother-in-law so I make this for a lot of family dinners and birthdays.

Our favorite way to serve this is to have rice alongside it. The filling mixed with rice is delicious. You’ll want to make sure you pre-cook the crust for 10 minutes in order to avoid having a doughy crust.

Sometimes I struggle with certain meals not tasting the same as when my mom makes them. Have you ever had that problem? This recipe however always turns out tasting just as delicious which always makes me happy.

Zucchini Pie

Zucchini Pie is a dinner recipe the whole family will love. With a flaky crust and a pie filled with meat, cheese and zucchini, what's not to love?

Ingredients

  • 1/2 lb ground beef
  • 4 cups thinly sliced zucchini about 2-3 medium sized
  • 1/2 cup margarine
  • 2 TBSP parsley flakes
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp basil
  • 1/4 tsp oregano
  • 2 eggs beaten
  • 8 oz mozzarella cheese
  • 1 pkg crescent rolls
  • 1/2 onion chopped

Instructions

  1. Brown ground beef and set aside

  2. Separately- cook and stir thinly sliced Zucchini, chopped onion, and 1/2 cup margarine for 10 minutes

  3. Stir in -parsley, salt, pepper, garlic powder, basil and oregano

  4. Add and combine 2 beaten eggs, mozzarella cheese and browned ground beef

  5. Line pie tin with crescent rolls and place in oven at 350 for 10 minutes to pre-cook the crust

  6. Pour mixture into crust

  7. Bake at 350 for 18-20 minutes

  8. Let stand for 10 minutes for serving

Zucchini-Pie

This meal makes enough to feed four but normally if I’m going to feed four I make two because it’s always nice to have a little extra and also the leftovers are quite delicious. You know how you have one of those meals you can eat multiple nights in a row and not be bothered by it? This Zucchini Pie is one of those meals for Tyler and myself. I hope K will love it as much as we do.

    Your zucchini pie looks awesome!!!! I’ve only really used zucchini in two or three different ways, and this looks like a great way to make it! Sounds delicious, thanks for sharing!!!!

    THIS was something Special! Was looking for a Zucchini Pie recipe to use up what I had and found yours that incorporated ground beef….which in my book is an all inclusive meal (meat, vege, bread). It was very good, easy to make, and will be made often! Thank you! You really should try tossing the onion in…..it gives it a nice flavor!
