Easy Pork Stroganoff

Easy Pork Stroganoff is the perfect way to use your leftover pork tenderloin!

A couple of weeks ago I posted the recipe for the Herb Crusted Pork Tenderloin, it is delicious. And we always have a lot leftover so I like to make Pork Stroganoff with the leftovers. It’s an easy meal and a great way to use the rest of the pork without having the same thing over again.

And also if you’re looking to save some money it’s a great way to use one meat for multiple meals. I always love when I can do that, especially because pork tenderloin can be expensive.

I’m also a sucker for pasta so I love taking my leftover pork tenderloin and making pork stroganoff with it. The flavors from the herbs on the pork make it a bit more than just pork and sour cream and makes for a flavorful and delicious dish.

Easy Pork Stroganoff

Easy Pork Stroganoff is the perfect way to use your leftover pork tenderloin!

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 4 people

Ingredients

  • Leftover Pork Tenderloin
  • 1/2 Onion diced
  • 1/2 stick butter
  • 16 oz sour cream
  • 1 bag egg noodles

Instructions

  1. Chop up pork and onion

  2. Sautee onion and pork in butter until the onions are tender 

  3. Cook egg noodles according to package instructions

  4. Add sour cream to the onion and pork, warm up the mixture but don't allow it to reach a boil or the sour cream will thin out and cause for a sauce that is too thin

  5. Serve the sour cream mixture over the noodles and enjoy!

See how simple? Can you tell that I really like simple recipes. When I first wrote this post I was working full time so easy meals were a staple.

Now I am a mom of a toddler, even though I stay home with her I still need easy and quick recipes because all of you moms know, toddlers are always on the move. My little one definitely keeps me on my toes.

I love that this is an easy and delicious way to use up your leftover pork tenderloin! Sometimes eating pork a couple times gets boring so I love being able to take a leftover and turn it into a new recipe.     I made apple crockpot pork loin earlier this week and had lots left over. A search on Pinterest brought me to your recipe for using it up. SO easy. So yummy. Thank you!
