Grilled Zucchini

I’ve got to say I think zucchini is officially my favorite vegetable. I love trying new recipes with zucchini, such as my Zucchini and Squash Bake. And our favorite meal Zucchini Pie. So when we got our grill I knew I wanted to try a recipe for Grilled Zucchini that involved grilling. This is a simple and delicious way to add a grilled vegetable to your meal.

Grilled-Zucchini

Ingredients:
-Zucchini
-Olive Oil
-Spices of your choice (We usually do Basil, Oregano, Rosemary and Garlic)

Directions:
1. Cut Zucchini in half long ways
2. Brush with olive oil
3. Sprinkle with selected spices
4. Place on medium-high grill and grill for approximately 20 minutes on each side. Grill until the skin side is tender

Serve this with your meal and enjoy. It goes wonderfully with the Honey Garlic Pork Chops. Do you have a favorite vegetable? Or a favorite vegetable done on the grill? Please share because I am always looking for new grilled vegetables to try!

    I am super glad to see this! I never know what to do with my zucchini except sautee it. do you think this would work for yellow squash, too? or is it somehow different?

    I absolutely love zucchini grilled this way, but never put anything on it but the oil and some garlic salt. Your choice of herbs sounds wonderful, I’ll have to try that! I grow all my own basil, oregano, rosemary, and garlic (and zucchini!), and I think this is an absolutely wonderful summer and fall accompaniment to any barbecued meat. Yum!
