Spinach Ricotta Stuffed Shells

Who likes stuffed shells? I do! I love how there are many different variations and this is one of my favorites. I love that it includes spinach so you have a vegetable but you don’t really notice a taste change. I also changed mine from the initial recipe found on My Recipes and added ground beef because Tyler likes meat in his meals.

Stuffed Shells-2

Ingredients:
-2 cups Marinara sauce
-Cooking spray
-2 1/2 cups part-skim ricotta cheese
-1/2 cup grated Parmesan cheese
-1/2 tsp dried oregano
-1/4 tsp salt
-1/4 tsp freshly ground black pepper
-1 (10 oz) package frozen chopped spinach, thawed, drained and squeezed dry
-1 large egg yolk
-1 garlic clove, minced
-24 cooked jumbo shells
-1/2 ground beef

Directions:
1. Preheat oven to 350
2. Cook pasta shells and drain
3. Cook ground beef and mix with the 2 cups of marinara sauce
4. Spread 1/2 cup meat sauce over bottom of a 13×9 baking dish coated with cooking spray
5. Combine ricotta and all ingredients through garlic into a large bowl, stirring well

Stuffed Shells-1
6. Spoon about 1 1/2 tablespoons filling into each pasta shell
7. Arrange stuffed shells in prepared dish
8. Pour remaining sauce onto shells
9. Cover and bake at 350 for 30 minutes
10. Let stand for 5 minutes before serving

This meal is delicious. As you know I like anything pasta and it’s always nice to have a meal where you can add in some delicious filling and a vegetable. So it’s a win/win right? Do you have any other recipes for stuffed shells?

    I’ve never made stuffed shells but they look great, and I LOVE spinach and ricotta so I’m going to have to try these… best part is I’m thinking that as you said you added meat, it won’t be an issue if I occasionally forget to put it in πŸ˜‰ as I like to eat vegetarian at least once a week.
