Stuffed Bell Peppers

Lately I have become a huge fan of bell peppers. I love the flavor they add to different dishes and I had really been wanting to try stuffed bell peppers. So I went on the hunt for a recipe and found this one from Tender Tummy. I knew I had to try this out and it was delicious!

Stuffed Peppers-1

Ingredients:
-4 red bell peppers
-1 to 1 1/2 cups cooked long grain rice
-salt and pepper
-2 teaspoons olive oil
-1 onion chopped
-6 garlic cloves, minced
-2 teaspoon tomato paste
-1 lb. ground beef
-2 tomatoes chopped
-1/4 cup chicken broth
-1 cup shredded cheddar cheese
-2 tsp. parsley

Directions:
1. Bring a large pot of water to a boil
2. Rinse peppers and chop off the tops and clean out the insides
3. Place the peppers in the boiling water and boil for about 5 minutes, until they began to soften
4. Remove peppers from water to let them drain, place cut side up on a paper towel to cool
5. Heat oil in a large skillet and cook chopped onion until tender
6. Stir in garlic and tomato paste, mix well and cook about 1 minute
7. Add ground beef into skillet and cook until brown
8. Add chopped tomatoes and chicken broth and cook until tomatoes began to break down
9. In a large bowl mix together meat mixture, 3/4 cup cheddar cheese, parsley and rice. Start with one cup of rice and add more as needed. Don’t add too much or it will make your mixture dry. Season with salt and pepper to taste
10. Pat the inside of each pepper dry
11. Stuff each pepper with mixture then top with remaining 1/4 cup of cheese
12. Place in casserole dish and bake at 350 for 30 minutes or until bubbly and browning on top. Remove from oven and sprinkle with parsley.

These turned out really good. My husband and I both enjoyed them! I plan to make them again soon. Let me know if you try them out. Do you have any different recipes for stuffed peppers?

    Hello there Emily! Came to visit you via Huckleberry Love! I love stuffed peppers, my guys not too much, But I found this little sweet peppers the other day at the market and they loved them, they are tiny, but can be stuffed, so I’m putting your recipe in them!     Oh, these look yummy! It’s really too bad my boys don’t like veggies. Do you think these would freeze well?

      Hmm I’m not sure. I don’t freeze food that often so I have never tried it before. I think the meat mixture would be fine but I wonder about the bell peppers. Let me know if you try it!
