Spaghetti Stuffed Bell Peppers

We loved the recipe I made for Stuffed Bell Peppers so much that I wanted to try them again but with something different for the stuffing. I saw a recipe for Angel Hair Stuffed Peppers on the back of the pasta box but when I read the ingredients I wasn’t loving them so I just took the idea of pasta inside a bell pepper and did my own thing and made these Spaghetti Stuffed Bell Peppers.

Ingredients:
– 4 Bell Peppers, in various colors
– Half a box, angel hair pasta
– 1 Zucchini
– 2 cups of marinara sauce
– 1/2 lb. Ground beef
-1 cup mozzarella cheese
– 1/2 cup parmesan cheese

Directions:
1. Cook ground beef
2. Cut off tops of bell peppers and scoop out insides
3. Cook bell peppers for 5 minutes in boiling water
4. Remove bell peppers and place on a paper towel open side up to dry
5. Chop zucchini and sauté in olive oil
6. Cook pasta according to package directions
7. Mix together ground beef, pasta, zucchini, pasta sauce and mozzarella cheese
8. Fill bell peppers with pasta mixture and parmesan cheese
9. Bake at 350 for 30 minutes or until bubbly and browning on top

    This is perfect! I recently found out how much I LOVE bell peppers, and this recipe gives me another dish I can use them in. Looks so delicious!!!

    Oooo…I like it! I have always wanted to try stuffed peppers, but have never actually done it–this is the second recipe I’ve seen for them tonight in some form or fashion–I think God is telling me that I need to make stuffed peppers… 😉
