I’m a big fan of mini muffins. So tiny and cute and perfect for when you need to feed a crowd, say at a Christmas party. These little Applesauce mini muffins make the perfect brunch food. I had to bring a breakfast food for my bible study ladies the other day so I made these. They are so very easy and delicious, I hope you will enjoy them!

Applesauce Mini Muffins

Ingredients:
1/2 cup butter or margarine
1/2 cup of sugar
2 eggs
3/4 cup applesauce
1 3/4 cup flour
1 T. baking powder
1/2 tsp salt

Topping Ingredients:
1/4 cup butter or margarine melted
1/4 cup sugar
1/8 tsp cinnamon

Directions:
1. Combine ingredients for muffins
2. Bake in a greased mini-muffin pan at 425 for 15 minutes
3. Melt butter
4. Mix together sugar and cinnamon
5. Dip tips of the muffins in butter and then in sugar and cinnamon mixture

And that’s it, see how simple? Do you have a go to brunch recipe? These muffins are the perfect choice!

These look so good! I can even pretend they are a little bit healthy since there is apple sauce in them. My daughter and I are going to make them as it is snowing outside and school is closed. Linking up with the DIYers
