Carrot Cake with Cream Cheese Icing

As I looked up these pictures I’m practically drooling because this Carrot Cake with Cream Cheese Icing was so delicious. Would you believe it was my first time ever trying Carrot Cake? It was! I always avoided it because who wants carrots in cake? Now I am saying ME! ME!

My brother-in-law’s birthday was at the beginning of January and I asked what he wanted for dinner and dessert. For dinner he chose the favorite meal of the boys, Zucchini Pie. For dessert he rambled off a couple things before he mentioned my aunt’s carrot cake. I immediately texted her to get the recipe and embarked on my first attempt at carrot cake and it did not disappoint.

Carrot Cake with Cream Cheese Icing

Ingredients: 

Carrot Cake
-2 cups all purpose flour
– 2 cups sugar
– 2 teaspoons baking soda
– 2 teaspoons cinnamon
– 1 1/2 cups vegetable oil
– 4 eggs
– 3 cups carrots, grated

Cream Cheese Frosting
– 8 oz. cream cheese
– 1 stick butter
– 1 box confectioners sugar
– 1 teaspoon vanilla

Directions:

Carrot Cake
1. Mix dry ingredients
2. Blend in oil
3. Add eggs one at a time
4. Add carrots and mix in
5. Pour into three 9 inch prepared cake pans
6. Bake at 350 for 25-30 minutes
7. Remove to a wire rack and let cool

Cream Cheese Icing
1. Mix together all of the icing ingredients
2. Ice cake and enjoy!!

Are you drooling too? This makes me really want to go and make this delicious cake again. I think I would probably put my carrots in the food processor next time to make them really fine. I don’t love the texture of having carrots that aren’t really finely shredded. But that is my opinion and this cake was absolutely delicious. Especially good is of course the cream cheese icing, because who doesn’t love icing? I don’t make cakes a lot but I’m thinking I should start doing it more often. I have another delicious recipe from my aunt that I need to try soon!

    This looks so good. I am especially excited to see that your doesn’t have walnuts! I absolutely LOVE carrot cake but HATE walnuts and I can never find a carrot cake w/out them. So double thumbs up from me 🙂
