I wanted to create something delicious for my sister for a back to school snack and something she could share with her fellow teachers. I wanted to try out some Easy Snack Recipes with Cool Whip so I made this Easy Layer Dessert.

Can you believe that school is already starting back? It is here. It feels like just yesterday I was rejoicing with my sister as she got done teaching for the year and now she is back to it.

I know that the first few weeks back to school can be such a busy and hectic time for her as a teacher, and for all of you moms out there. Even though I don’t have kids yet, I was a nanny for three years, so I’ve experienced those busy back to school days. It can be crazy trying to get back onto a normal schedule.

I headed out to Wal Mart first to buy what I needed and I was pretty excited because there was a great coupon to help me save $1 off when I bought one Cool Whip and two JELL-O Pudding Mixes which I needed for this yummy recipe. I picked up my ingredients and headed home to whip up this dessert.

Easy Layer Dessert

Course Dessert
Cuisine American

Ingredients

  • 1/2 cup butter
  • 1/2 cup chopped pecans optional
  • 1 cup flour
  • 1/2 cup brown sugar
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 2 cups Cool Whip
  • 2 boxes Chocolate Instant Pudding 4.5 oz size
  • 3 cups milk

Instructions

  1. Layer 1: Melt 1/2 cup butter, add 1/2 cup chopped pecans (optional), 1 cup flour, 1/2 cup brown sugar 

  2. Mix Layer 1 together and spread on the bottom of a greased 13x9 baking dish

  3. Bake for 10 minutes at 375. Cool thoroughly before adding next layer

  4. Layer 2: Mix together and spread the following on top of the 1st layer. 8 oz cream cheese, 1 cup powdered sugar and 1 cup Cool Whip

  5. Layer 3: Mix together Instant Pudding and milk until thick. Spread on top of the 2nd layer. 

  6. Use the remaining Cool Whip and spread on top 

  7. Let the dessert sit overnight or a few hours to get cold in the fridge

One fun thing about this dessert is that if you don’t like chocolate or want something a little different you can also make it with pistachio, lemon or butterscotch. It’s a great recipe to change up according to what you’re feeling. Or you could even make two, one for the chocolate lovers and one for those who don’t or who like my mom don’t eat chocolate.

This dessert was so delicious. I love a good cold dessert when it’s hot outside and even though school is starting back, the summer weather is still out in full force here in Tennessee.

I loved being able to share this dessert with my sister and her fellow teachers as they all get back to work. I admire them for their hard work and I know I could not do it. Do you have a favorite back to school snack for your kids or their teachers?

      Hi Donna,
      The nuts are optional, so you can just leave them out! I don’t like nuts so I always leave them out as a personal preference.
