Spinach and Tomato Pasta Salad

Spinach and Tomato Pasta Salad is the perfect summer recipe.

I’m a huge fan of pasta, as you all well know. But honestly I’ve never been much of a pasta salad lover. Cold pasta never seemed that good to me, until I tried this pasta salad out. My sister’s mother-in-law made this for us on a beach trip one year. I was blessed to grow up in a family where my mom’s side and dad’s side always got along. They actually all went to high school together so it always made for extra large family parties when we all lived in Atlanta. Because of that we take family beach trips every spring break or summer with my dad’s sisters, my mom, all the kids and now my sister’s mother-in-law.

I was convinced to try out this pasta salad and I didn’t regret it. You can serve it as a side dish or add in some chicken to make it a great main dish this summer. With the 90+ degree weather it’s nice to have a dinner that’s cold and perfect to enjoy out on the porch once the evening cools down a bit.

Spinach and Tomato Pasta Salad

Total time: 15 mins
Ingredients
  • 6 ounces bow tie pasta
  • 1 cup fresh spinach
  • 1 cup grape tomatoes, halved
  • 6 ounces feta cheese
  • Pine nuts
  • Dressing:
  • 1/3 cup olive oil
  • 2 garlic cloves
  • 1 small minced onion
  • 2 TBSP lemon juice
  • Salt and Pepper to taste
Instructions
  1. Cook pasta according to package instructions
  2. Halve tomatoes
  3. Mix together pasta, spinach, tomatoes, feta cheese and pine nuts
  4. Mix together dressing
  5. Add dressing to pasta when you’re ready to serve

This recipe is a bit of a pitch and throw recipe so you can adjust the measurements depending on what you prefer. Also if you want to make it a main dish then pick up a rotisserie chicken and add some chicken to it which makes it delicious.
