I’m going to be honest, salad is not my favorite thing. It’s not even close. I try to eat it and sometimes I enjoy it, mainly at Olive Garden, but I just can’t get that into it. Over July 4th weekend when my mom whipped out her recipe for this Rustic Bread Salad I was like really? A salad where the base is bread, that’s a salad I can get on board with! She had me make the salad and it was so simple I knew I wanted to make it at home and share with you guys.

We spent the 4th of July weekend up in Michigan at my parents new home. They moved up there at the beginning of this summer and are still getting settled in to their new house. I was excited because they bought a nice size house where we can all have a bedroom when we come visit. The weather was gorgeous and we had a great time visiting until my brother had yet another collapsed lung. He had to undergo the surgery he had last year on the other lung but thankfully he is recovering well and shouldn’t have to go through that again.

So back to this salad, can you really call it a salad when the lettuce is replaced by bread? I guess so. So if you love bread then you’re going to want to make this salad for your next family get together or you know just for lunch.

Rustic Bread Salad

Total time: 15 mins
Serves: 6-8
Ingredients
  • 1/2 lb. day old Italian Bread, torn into chunks
  • 3 cups ripe tomato chunks
  • 3/4 cups thinly sliced red onion rings, halved
  • 3/4 cup Italian dressing
  • 1/2 cup shredded parmesan cheese
  • 1/3 cup pitted ripe olives, halved lengthwise (optional)
Instructions
  1. Tear bread into chunks and put in a large bowl
  2. Cut tomatoes into chunks
  3. Cut red onion
  4. Toss together all ingredients just before serving

In our house we don’t add the olives but if you enjoy them then go right ahead and throw the on in! Even though it was a bit of stressful night with my brother in the hospital we enjoyed this Rustic Bread Salad and it’s definitely a recipe I’ll be keeping on hand.
