So with this whole pregnancy thing cooking has not been high on my priority list, but as my appetite has returned one thing I’ve really wanted is lasagna. It’s a favorite dish of mine, but can take awhile to prepare, and as the days are getting busier with the approach of the holiday season, I am always on the lookout for easy meal solutions.

I just got home from a week at my parents house. I went up to visit for my little sister’s birthday. Before I got ready to leave, I was busy busy trying to line up things for the blog, do laundry and pack. So Sunday, after church we stopped by Walmart to pick up a NESTLÉ® STOUFFER’S® Family Size Entreés Lasagna with Meat Sauce and man was that a good idea! It made for such a delicious and easy dinner. Right now you can pick up one on rollback until 12/31!

I wanted to make a great vegetable side dish to go alongside my lasagna, so I decided to try out this Spinach with Sour Cream recipe I’d gotten from my mom. I’d never tried it but all of the ingredients sounded good and let me tell you it did not disappoint. I loved what a delicious way it was to get more of a great vegetable into my diet plus it’s simple to make, so that’s a win win.

Spinach with Sour Cream
Author: Emily
Prep time: 10 mins
Cook time: 30 mins
Total time: 40 mins
Serves: 4
Ingredients
  • 1 package frozen spinach, chopped
  • 1 Tablespoon onion
  • 2 eggs beaten
  • 1/2 cup sour cream
  • 1 cup parmesan cheese
  • 1 Tablespoon flour
  • 2 Tablespoon butter
Instructions
  1. Cook spinach and onion in a little water according to package instructions and then drain
  2. Mix other ingredients together and combine with drained spinach
  3. Bake at 350 for 30 minutes

Cooking the lasagna was simple and then while it cooled I threw in the Spinach with Sour Cream. The two of these together made for such a delicious dinner and easy. And right now between being pregnant and the busy holiday season that is so important to me.     Oh man, sounds soooo good! I love spinach and sour cream so I bet I would adore this.
