These simple Mini Pecan Cakes are best served alongside a cup of hot cocoa!
Let me tell you it has been a cold winter for this southern girl. We live in Tennessee so you don’t really expect a lot of snow and ice, especially since we lived in Northern Virginia before we came here. But we’ve had quite a few snowfalls and snow days this winter already. On cold days like that there is nothing I want to do more than to cozy up on the couch with a cup of hot cocoa and a warm blanket. That’s why I was so excited to receive my Cozy Collection from Starbucks®. It was complete with Starbucks® Hot Cocoa K-Cup®’s in both Classic and Salted Caramel. I knew I wanted to make a treat to enjoy alongside my Hot Cocoa so I decided to make these yummy Mini Pecan Cakes.
The Mini Pecan Cakes are perfect for a little treat to enjoy alongside a cup of hot cocoa while you’re curled up on the house. They’re also simple to make and if you don’t love pecans then you could make them without because the filling is just sweet and delicious. I know it defeats the purpose of the name but still it would be good!
- 1/2 cup butter, softened
- 3 oz. cream cheese, softened
- 1 cup all purpose flour
- 1 egg
- 3/4 cup brown sugar
- 1 Tablespoon butter
- 1 teaspoon vanilla
- dash of salt
- 1/2 cup chopped pecans
- Mix butter, cream cheese and flour together.
- Chill mixture for at least 1 hour, up to 48 hours
- Beat together egg, brown sugar, butter, vanilla and salt
- Make cups from the dough in a mini-muffin tin
- Add 1 teaspoon of brown sugar filling mixture
- Sprinkle chopped pecans on top
- Cook at 350 for 25 minutes
I love making little treats like these because they are perfect for a quick snack when you don’t want to fill up but just have a treat.
