Thick, delicious and covered in frosting, these Sugar Cookie Bars will be your new favorite dessert!
It seems like forever I’ve been eyeing all these beautiful photos of sugar cookie bars and wondering to myself, could I make a recipe for these too? Well the other day I got home from a trip, got up Monday morning and set to making myself some sugar cookie bars and let me tell you, they did not disappoint. Thick and delicious and topped with gobs of icing, they are divine.
This recipe makes a big 9×13 pan of these delicious bars and I knew there was no way I’d finish them all off myself. So I pulled a few back for myself and was able to send the rest with my sister to her school. I love having a group of hard working teachers that I can share my recipes with because you know I don’t need ALL of these sweets lying around. Especially because I brought home leftover cupcakes from my baby shower!
Since Easter is right around the corner, I wanted to make these a little Easter themed. But the fun thing about these bars is they can be customized for any holiday. Green for St. Patrick’s Day, red for Christmas or Valentine’s, blue for the 4th of July. As long as you have some food coloring the possibilities are endless!
For these sugar cookie bars I decided to use Bob’s Red Mill Organic Unbleached All Purpose White Flour. It is freshly milled and not enriched with any additives. Easter in our family is always celebrated differently year to year. We used to always go to my Grandma’s for the big Easter meal and Easter Egg Hunt after church on Sunday. But now that we live in another state and I’m married, it’s a year by year thing. This year I anticipate we will all be sitting around anxiously awaiting my sister’s baby boy being born (or maybe he’ll already be here). I am looking forward to next year when we have two little ones to share in the Easter fun! This is a recipe I’ll need to remake for Easter weekend because it’s so easy and delicious.
- 3 cups Bob’s Red Mill Organic Unbleached All Purpose White Flour
- 1 1/2 cups sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 sticks butter, softened
- 3 eggs
- 2 teaspoon vanilla
- Mix together dry ingredients
- Add wet ingredients and blend with a mixer until well blended
- Spread in a greased 9×13 pan
- Bake at 350 for 30 minutes
- Allow sugar cookie bars to cool and then spread with buttercream icing
So to make the icing for these sugar cookie bars I grabbed a box of confectioner sugar and followed the instructions to make buttercream icing. It made plenty of icing to cover all of the bars with a thick and delicious layer of frosting. I added a few drops of blue food coloring until I got the icing the color blue I wanted. You can use any color of course which is what is so fun about these bars!

These look so yummy! Bob’s Red Mill is one of my favorite brands, because they make assorted gluten free mixes, as well as the best almond flour I’ve ever worked with! I’m definitely going to try out this recipe using their GF flour mix 🙂
