I’ve never been much of a snacker but ever since having my baby and since I’m feeding myself and her I’ve needed the extra calories. I’m a total bread and carbs person. I’ve tried to cut them out but I just love them too much. So instead here’s to enjoying the carbs in moderation and working out consistently. I’m trying at least, it’s hard with an 8 month old. I made this Poppy Seed Bread with an Orange Juice Glaze the other day and it was a great snack to have on hand when I get those afternoon munchies.
I love that this recipe is simple to make. It only requires one bowl and you just mix all the ingredients together. With a little less time on my hands lately I love having easy to make snacks. You can enjoy this bread with or without the orange juice glaze. I thought it was delicious both ways. Orange juice isn’t something I regularly drink but I had it on hand when I made this bread because I had used it in my Russian Tea recipe over Christmas. But if you don’t have orange juice on hand you can make this bread without the glaze.
This recipe makes two loaves so if you want to half it to make just one you can do that too! It would be a great recipe to take to a new mom or new neighbors. I always think bread or muffins are perfect for welcoming someone to the neighborhood. Or cookies of course, because who doesn’t love cookies? When I halved it I did one egg and then just did my best to halve a second egg and it turned out fine!
Poppy Seed Bread with an Orange Juice Glaze

Ingredients
- 3 cups all purpose flour
- 2 1/2 cups white sugar
- 1 1/2 tsp salt
- 1/2 tsp baking powder
- 3 eggs
- 1 1/2 cups milk
- 1 1/2 cup vegetable oil
- 1 1/2 TBSP poppy seeds
- 1 1/2 tsp vanilla
- 1 1/2 tsp almond extract
- 1 1/2 tsp butter flavoring
- 1/4 cup orange juice
- 3/4 cup confectioner sugar
- 1/2 tsp vanilla
- 1/2 tsp almond extract
- 1/2 tsp butter flavoring
Instructions
Mix together flour through the first butter flavoring in a large bowl
Grease two loaf pans and preheat oven to 350
Divide batter among the two loaf pans
Bake at 350 for 60 minutes, or until a fork comes out clean
Mix together the ingredients for the glaze, orange juice, confectioner sugar, vanilla, almond extract, and butter flavoring.
Pour glaze over warm bread, serve and enjoy
