Hi all! I’m Britney from The Princess & Her Cowboys and I’m so excited to share over here at Love, Pasta, and a Tool Belt! Today I have an awesome recipe for these Almond Poppyseed Muffins.
The original recipe is for one loaf of bread but I wanted it in muffin form. After some trial and error, we came out with a finished product. Just so you know, there are no actual almond pieces, just almond extract.
Almond Poppyseed Muffins
Makes 12 Muffins
1/4 c butter, melted
3 1/3 T oil
2 eggs
1/2 c milk
3/4 c sugar
1/2 tsp vanilla
1/2 tsp almond extract
1 c flour
1/2 tsp salt
1 tsp baking powder
3/4 tsp poppyseeds
Preheat oven to 325 degrees. In a large mixing bowl, cream butter, oil, eggs, milk, sugar, vanilla and almond. In a separate bowl, mix flour, salt, baking powder and poppy seeds. Add to first mixture and blend well, but do not over mix. Pour into muffin pans that have been greased or have papers. Bake between 23-27 minutes.*
Icing
1/4 tsp vanilla
1/4 tsp almond extract
1/4 c powdered sugar
(1 T orange juice-optional)
Mix ingredients together and drizzle over muffins.
*If you want to make this into a loaf of bread, grease and flour bread pan and bake at 325 degrees for 45 minutes.
