I love Thanksgiving! It’s really probably a close tie with Christmas for me. All of the delicious food, I’m just imagining the spread right now. But it’s more than the food, I love spending time with family and taking time to remember all of our blessings.

We always have a lot of choices at Thanksgiving and this Mixed Vegetable Casserole is a staple for our Thanksgiving. My mother-in-law has even started making it on the years that we spend Thanksgiving with them. Even those who don’t like vegetables love this casserole so try it out for your family this year!

Ingredients:
– 1 large package frozen mixed vegetables
– 1 cup grated cheddar cheese
– 1 cup mayonnaise
– 1 cup chopped celery
– 1 medium onion, chopped
– 1 stick margarine
– 1 tube crushed Ritz crackers or you can use Cheez-its

Directions:
1. Cook vegetables according to package directions, until just tender
2. Drain vegetables and mix with cheese, mayo, celery, and onion
3. Put into greased casserole dish
4. Melt margarine and mix in crackers or Cheez-its
5. Put cracker crumb mixture on top
6. Bake at 350 for 30 minutes

This is a simple and delicious vegetable dish that we always have at Thanksgiving. I like doing the Cheez-it’s on top because it adds a little extra flavor to this casserole.

    Yumm, what an awesome veggie casserole idea! Some of my family is not crazy about mayonnaise so I subbed 1/2 c. sour cream and 1/2 c. mayonnaise, it came out extra creamy! In my opinion the onion and celery made this dish exceptional! Never thought of adding celery and onion to mixed veggies! Clever and oh so tasty!! Family loved it (and no one noticed the mayo!) 🙂 Thanks for sharing!

    My family has been making this casserole for 30+ years! It’s a must for our family holiday dinners. The only difference is that we add an 8 oz. package of cream cheese. It’s so delicious and creamy! 🙂

    hi Emily…regarding your vegetable casserole recipe, can you tell me what you
    consider to be a LARGE bag of vegetables? can you give the ounces of the bag, please?

      Hi Sandy,

      I would look for a bag that is 28-32 oz and as you’re mixing up the casserole just add gradually to make sure it doesn’t seem too dry. I hope you enjoy!
