Please welcome my contributor Jessica from Together as Family as she shares her recipe for Feta & Avocado Salsa!
Hi again! I’m so happy to be back with another recipe for you all. I realize it’s September and I should probably be thinking about all things pumpkin & apple, but you guys, it’s football season! I LOVE football. College football that is. On the weekends you will find me in my BYU Cougar gear (any fans out there?) along with my kids (get them addicted to football young 😉 ) watching the game. We used to live in Utah and we were able to go to every home game, but we moved out to Maryland several years ago so now we just watch at home.
If you came to our house on a game day you might think it was Thanksgiving…… I love planning a big menu and making all sorts of treats to munch on, things to dip, and small bite foods. I’m crazy like that! If you follow me on Instagram, I posted some cute football brownies last week. The one thing I love even more than football food is football shaped foods; brownies, rice krispies, cheese balls, sweet dips. I’ve learned that you can shape anything into a football 🙂 I hear all the time, “oh, I only like football games for the food.” I am the exact opposite. Although I do love the food part, especially making it all, I love watching the game even more.
This avocado feta salsa is perfect for munching on during the game. I won’t lie, this salsa did not even last until half-time at our house. I wish I could say we had a bunch of people over and that I did not eat my weight in it, but I can’t. It was just my husband & I 🙂
You may think the ingredients list is too short and simple, but I promise it all comes together so nicely and the flavors pair perfectly with each other. The creamy, smooth avocado, tart lime juice, and the salty feta cheese. Yum! Serve with some tortilla chips and watch it disappear.
You could also add some cilantro, red onion, and/or diced jalapeno. I kept it nice and simple and we loved it that way. For best flavor, get the small block of fresh feta cheese and crumble it with your hands. I will also note that I never add additional salt. The saltiness from the feta is perfect. But add salt & pepper as you like.
- 3 ripe avocados, diced
- 5 roma/plum tomatoes, seeded and diced
- 1/2 teaspoon garlic powder
- 1/2 cup crumbled feta cheese
- juice of 1 lime
- salt & pepper, to taste
- Combine all ingredients together in a mixing bowl.
- Stir gently.
- Serve with tortilla chips.
- Store leftovers in fridge.
- Will keep well for 1-2 days.
