Cinnamon Roll French Toast Casserole

Do you ever make a recipe and it turns out way better than you expected? Well that was this Cinnamon Roll French Toast Casserole for me. One of my favorite things I remember from growing up is the specific meals we had around the holidays. We always had a Traditional English Pasty on Christmas Eve and quiche, cream cheese braid and grits for Christmas morning breakfast.

After Tyler and I got married, holidays started changing a bit. We alternate Christmas and Thanksgiving between our families each year. But we’ve always done our own Christmas, just the two of us (now three of us), before we take off for family Christmas. As I started thinking about it I wanted to make sure we have our special meals for our Christmas Eve and Christmas morning. Each year we’ve usually had this French Toast Casserole but I wanted to create something that was a little bit easier and that K can help me make.

I love the memories I have growing up helping my mom in the kitchen. Decorating Christmas cookies was always a favorite. I also remember making chicken-n-dumplings with my great grandmother. She made the best chicken-n-dumplings. As K gets older, I want to be able to enjoy those memories in the kitchen together. I’ll be honest with y’all, and say when I tried to get her to help me make this casserole, she just tried to shove the cinnamon roll dough in her mouth. I don’t think she’s quite old enough, but next year will be the year I think.

I’m excited to have a Christmas morning breakfast using Pillsbury Cinnamon Rolls, one of my favorite products they make.

Cinnamon Roll French Toast Casserole

Looking for an easy and delicious breakfast for the holidays? This Cinnamon Roll French Toast Casserole is a simple brunch or breakfast recipe and so good!

Ingredients

  • 2 cans Pillsbury Cinnamon Rolls (8 count)
  • 1 stick butter
  • 3/4 cup brown sugar
  • 1/4 tsp cinnamon
  • 3/4 cup milk
  • 3 eggs

Instructions

  1. Melt butter in a microwave safe bowl 

  2. Mix together the butter, brown sugar and cinnamon

  3. Spread half the brown sugar mixture in the bottom of a greased 9x13 pan 

  4. Cut cinnamon rolls into quarters and spread in one layer in the casserole dish 

  5. Spread remaining brown sugar mixture on top of cinnamon rolls

  6. Beat together the eggs and milk and pour over the cinnamon rolls 

  7. Use a fork to lift up some of the cinnamon rolls to ensure the egg mixture gets underneath the cinnamon rolls, in case they are packed tightly in 

  8. Bake at 350 for 45 minutes or until golden brown and set 

  9. Spread icing from cinnamon roll tubes over casserole immediately upon removing it from the oven

      There are some brands of cinnamon rolls with no dairy and same with the butter and milk. I’m making the whole thing diary free for my son.

    I was just looking for a delicious cinnamon roll recipe. I did cinnamon roll waffles last year, but I have an extra kid now and not as much time to do all those individual things.

      Oh I love cinnamon roll waffles but yes they are time consuming haha! This is a nice easy breakfast!

    I think it’s nice that you’re having the kids help out in the kitchen, it’s one of the best ways to learn a very important life skill that they’ll use when they grow up. Not to mention that you’re going to be making memories as well! This recipe is delightful!

    This sounds yummy! I read through the instructions and I don’t see eggs or milk on the ingredients list. How much of those does this recipe call for!
